If anyone can be credited as keeping the Ethanol Club alive for so long, it would be Kahlua. Working as Bourbon's assistant, Kahlua manages all of the club's finances (largely so that Bourbon can't do anything too reckless with the club's money). She also prevents Bourbon from doing anything too reckless.
Despite having such a big role within the club, Kahlua always works in the back room and so many visitors don't even know she exists. This she prefers; she can do her work in peace, without rowdy drunks leering over her shoulder. She does try to keep an animal or two present for this; it's better to have some company than none at all.
Kahlua is a very mild-mannered lady, soft spoken and rarely raising her voice for any reason. She is also very shy, and typically keeps to herself. It seems an odd fit considering she works in such an energetic place, but Kahlua's mellow attitude does help prevent the club from being shut down because of Bourbon giving out free shots...and that in itself makes her a very important club employee.
