I think they did it to encourage cooperation between members of the villages? They can learn up to four different jobs, but you have to change between them and can only do so once a day.
I'm compensating by having 'dedicated' characters and characters that can switch. Like a warrior and a gatherer dedicated characters, since they are very active jobs I can tend to very often, but my doctor I'm also going to teach the herbalist career and change between them every day/couple days. That way the one can grow the plants and then switch and make the medicine, since you can set them and let them do their thing for 30 mintues/however long and just check in every now and then.
If you click on the 'Villagers' tab at the top and click on your villager and choose 'go to career', in the top right it will have a 'change career' button. We're allowed to change their careers once a day I believe. ^ ^
